This week we started off with Calvin's birthday. He requested tacos so I made shredded chicken tacos. We didn't get a picture of that, but Jeffery did grab a picture of what Calvin had decided on for his birthday cake. He loved baking cupcakes with me.
Monday we did steak and potatoes again, this time I did baked potatoes. The topping on the steak this time was a mushroom butter. I love asparagus and I got some for a good deal at Costco. This plate is a mess because halfway through my steak I realized I'd forgotten to take a picture.
Tuesday night I wasn't hungry for dinner and so Jeffery made himself something and had me take a picture for the blog. This is orange chicken, he cooked up the veggies separately, the orange sauce and chicken pieces came from Costco as well.
But let me tell you about our orange chicken story. We went into Costco during lunchtime so we were pretty hungry, and we aren't eating out so we didn't grab food before we went in. Enter Costco samples. It was pretty busy in there. We saw a woman rolling her sample cart to her location to start cooking, and she had this orange chicken. She's probably the slowest moving sample lady the population of Costco goers has ever seen, add to that cooking time, and the time it takes her to cut and ready the samples... anyway, we finished our shopping, ate a ton of samples, and circled back. Still not done, we meandered for a bit longer, and then got in line behind a bunch of other people. When we get to the front, she's not handing out samples, she's back to cutting up and displaying another batch. Well we finally got our sample, and it was worthy of a place in our freezer.
Wednesday I made those chicken burgers again (for which I have not typed up the recipe for, I'm sorry, I will get to it.) Jeffery requested mushrooms on his instead of the bruschetta. I also made waffle fries. The challenge hasn't been too bad for us, except this past week I've been really really craving Chickfila.
Thursday night I made ribs and corn on the cob. These ribs are super easy. I season the ribs with whatever I'm feeling like eating that day and then cook them in the crockpot until they start to fall apart. Once they're tender I heat the grill until it's as hot as it will go, and then sear the top of the ribs until they get nice grill lines. I cooked the corn on the grill as well.
Seasoned
I arrange them so that the top of the rack is against the bowl side, this way they crisp up a little bit instead of getting soggy. In the bottom of the crockpot I pour in a cup of beef broth, or if I'm lazy, a cup of water with a beef bouillon cube.
Saturday night I made Emily's Famous All Day Sauce That's Not Usually All Day It's a Pretty Long Name. The spaghetti brand I like from Costco also has a variety pack of noodles that I picked up to try. I like pasta, so I make it a lot. Sue me.
Henry loved the bite size pieces.
